Transplant when night temperatures are over 45 degrees Fahrenheit. Grows best when temperatures are 65 - 75 degrees Fahrenheit. When the plants are knee-high, snap off all of the lower growth while it is small from the bottom 6 - 10" of the plant. Do this in the morning while the plants have the most water in them. Removing the lower growth helps to improve air circulation and reduce the spread of diseases such as early blight. When a tomato is red and firm, it is ready to be picked. 'Early Girl' produces exceptionally juicy tomatoes that have a deep crimson color, loose texture, and sweet flavor. Use them to make soups, sauces, stews, ketchup, paste, juice, quiche, and pies. Add them to curries, casseroles, and chutney.
