Brassica oleracea (Botrytis Group)
A show-stopper purple cauliflower to add to your collection of purple vegetables. The distinctive color comes with a sweet flavor too, tending toward broccoli. Produces large purple heads that are not only delicious, but beautiful. Best success is with spring and fall crops. This is an overwintering cauliflower and requires cold temperatures to form heads. Purple cauliflower is rich in flavonoids which makes the flesh purple. Also high in Vitamin C, with a fair amount of calcium, fiber, folate, potassium, and vitamin A.

Unlike white cauliflower, do not cover the head. Cut head when smooth, before it becomes grainy.
